1 cup rolled oats
1/2 cup flax seed meal aka ground flax seeds
1/2 cup crunchy peanut butter
1/3 cup honey
1 tsp. vanilla extract
1/2 cup mini chocolate chips
INSTRUCTIONS
Combine all ingredients in a medium-sized bowl and mix well.
Roll about 1 tbsp. of the dough between your palms to form a small bowl. Place on a plate or a rimmed baking sheet and pop in the fridge or freezer for one hour. Enjoy!
I usually transfer to an airtight container and store them in the fridge for up to 3 weeks.
Makes 20 balls.

Does it have to have flaxseed in it or can you replace it with something else
We added cranberries instead of chocolate chips to give it a sort of peanut butter and jelly vibe. I made a double batch only about three hours ago and they are half gone! Do not attempt to make a single batch! They will disappear. My husband asked me to pack him some in his lunch tomorrow. My kids love them they are 67 and eight. Excellent snacks for everyone and super easy
So oats can be eaten without being cooked?

I make these and so much better than processed sweets or just PB & J. This time I used organic oats, honey , organic peanut butter and pecans and a tiny tiny bit of dark chocolate chips. I squeeze into a ball and refrigerate. I put olive oil on my hands to help them not stick.
I just made them and they are super delicious! I didn't have enough peanut butter so I did half peanut butter and half almond butter. Me and my husband loved it so much that only half the batch made it to the fridge to be cooled 😀 Thank you for the recipe!

Could these be made into bars instead of balls or would they fall apart?
1 cup rolled oats
1/2 cup ground flax seeds
1/2 cup peanut butter
1/3 cup of honey (/liquid sweetener)
1 tsp vanilla extract
1/2 chocolate chips
Mix, scoop, roll.
Refrigerate 1 hour
Store in fridge for weeks, freezer for months.
