Been freezing my bread for years….I didn't know It was a good thing.
Because I must eat gluten free, I have grown used to freezing all of my bread. It's too damn expensive to do otherwise. I also toast it to make it taste "normal" after freezing.
The same principle applies to Pasta! If you cook your Pasta a day ahead of time, and refrigerate it overnight, you will lower it's glycemic index substantially.

I have been freezing my bread for years but I don’t buy sliced bread from large commercial supplies of bread but rather buy my bread unsliced from a bakery. I have found it tastes better last longer than mainstream bread suppliers. I also stopped buying pure white bread because the flours is highly proceeded more than the white Fiber bread not to be mistaken for brown bread.
I prefer my toasted bread placed in the toaster while frozen it comes out so much taster than fresh toasted bread.
The other thing I actually do is cook and freeze my paster for the very same reasons it does not impact the sugars levels at all.

Yes! This is great news! I have an elevated A1C. Gave up bread a while back along with other “white” food items, and some high sugar fruit. I had read that “real” sourdough (evidently, some store offerings are not made with the sourdough starter) was good for you due to the enzyme probiotic of the sourdough. Our Costco carries Boudin Bakery Sourdough bread in a two loaf package in my area. Have been purchasing and freezing both loafs, and, toasting it. I’m ELATED to hear that it is not as bad for me/my blood sugar as I thought. 👏🏼🙏👍🏼 🙇🏻♀️💕
It does not work, Please check blood sugar after eating fresh and defrosted or toasted bread between one to two hours, results are always same and high. Just by looking one scientific paper one can not conclude, but please check your blood sugars otherwise can be quite risky if you have insulin intolerance.

There's no healhy bread. At all. Period.
I always freeze my bread as I live alone so can't get through a full loaf before it goes off. I just stick it in the toaster from frozen. Good to know it helps lower the glycaemic index.

A very profound and real eye opener, it's like being told the Earth 🌎 is round for the first time when you did not know. Same about the GI of frozen bread and cold refrigerated potatoes. Never knew cold temperatures treatment can change the structure of starches.

The glycemic index of any ONE particular food is of no concern unless you are ONLY eating that ONE particular food.
What MATTERS is the glycemic LOAD of an entire MEAL. Glycemic LOAD changes depending on the types of food
(macros) eaten in certain combinations, how the food is cooked / or not cooked and the amount/quantity of each
of the foods in the meal consumed. <<<<< ONE study on one food item doesn't translate to FACT for food eaters
because the influence of factors on the glycemic LOAD is variable depending on the types/cooking and quantity of
combined foods at any one meal/sitting. ——————- Being smart isn't about knowing one thing. It's about knowing how
many things interact and result in different outcomes under real life circumstances.

Great to know! Due to my insulin resistance I only eat the low carb and keto breads. I wonder if it applies to those? I do miss my whole wheat real sourdough breads.
I remember back in the late 1970s and early 1980s inflation was high. My mom would buy beard when it was on sale to save money. We had a large freezer. Now to learn this bread was actually healthier really makes me feel happy! Beard is my diet vice and now I can make it healthier! If you freeze Pop Tarts does make them more healthier?

I wonder if the study mentioned anywhere if this would have an effect on pasta such as ravioli or spaghetti that was pre-made and then Frozen to be eaten at a later date. It'd be interesting to know if this same effect occurred on all wheat-based products if they were frozen.

I am a diabetic and switched to whole wheat. My kidney's from many thing's dropped to 13% function. They were getting me ready for dialysis and gave me a book on what not to eat. Turns out 100% or even 60% whole wheat bread is a no no for kidneys but white bread is much better. Well I changed many things in my diet and my kidneys recovered to 30%. You're damned if you're damned if you don't.

How much more does freezing the bead then toasting it lower the percentage than just freezing it? That's what I wanna know ok? So if just freezing the white bread lowered the glycemic index 31 percent, how much lower does toasting it after have? 40? 50 percent? Please be specific on this , I want to know and so does everyone else watching this.
