Plant-Based Ginger snaps |A recipe to live for!

Ginger snap recipe
2 cups of spelt flour
1 tsp ground ginger
1/2 cup of chopped crystallized ginger
1 tsp baking soda
1 tbsp Ceylon cinnamon
3/4 cup softened butter
1/2 cup coconut sugar
1 flax egg
1/4 cup of molasses (I used a little less so the taste wouldnt be as strong)
2 tbsp vanilla
1/4 cup sugar for rolling cookies in
Prepare flax egg. One tbsp flax mixed with three tbsp of water. Let the mixture sit to thicken for 5 minutes.
Add sugar and butter to a bowl and blend well. Then add the rest of your wet ingredients and mix.
Combine dry ingredients to a separate bowl
Preheat the oven to 400 degrees and line a baking pan with parchment paper.
Add dry ingredients to wet ingredients and blend.
Scoop out 2 tablespoons of cookie dough (small to medium size ball) and roll in sugar.
Let them bake for 15 -20 minutes and allow to cool

Im so glad I was able to sample these! They were so light and fluffy like any other standard cookie. Flavor was definitely on point 😎
