Hi there I'm in need of advice about the purpose of paramount crystals. Are they only used to revive old chocolate or do they serve another purpose? I am trying to make chocolate I have made some & when they come out of the fridge they look amazing & shiny but the following day they are dull & kinda spotty, looking like grains of milk powder. Cannot paramount crystals help?
I cant get my hands on Paramount Crystals in South Africa. Could it possibly go under a different name? When i ask at our baking store, i get given dirty looks, as no one knows what i'm talking about.

Sure we do. They are listed as Merckens Orchid Wafer on our site.
Oh I love the colour of the purple melts. do u sell them?
