Today I am leaving you with my mother’s favorite native Puerto Rican beach treat 🏝 Try it out and let me know how you like it!

Ingredients:
2 tbsp of coconut oil
4 cups of shredded coconut
1 ½ cups of coconut milk
1 cup of coconut water
1 ½ cups of brown sugar
1 ½ cups of white sugar
2 cinnamon sticks
1 tsp of ground cinnamon
1 tsp of ground ginger
1 tsp of vanilla
1 tsp of citric acid
1 tsp of fresh ginger
Pinch of salt
Instructions:
1- In a pot, bring coconut oil, coconut milk, coconut water and shredded coconut to a boil on medium high heat.
2- Cook for 15 minutes.
3- Add the sugars, salt, cinnamon, cinnamon sticks, ground ginger and citric acid.
4- Continue cooking for 45 minutes until everything begins thickening.
5- Add the fresh ginger and vanilla, continue stirring and cooking on low heat until the syrup has thickened.
6- While it’s hot, scoop into desired shapes on wax paper or silicone mat.
7- Set aside and let it rest until it has cooled down enough to eat.
