HEALTHY PEANUT BUTTER PROTEIN ENERGY BITES | NO BAKE RECIPE

Looking for a healthy snack before the gym, in between meals, or just so you don’t snack on junk food? These 5 – ingredient, no-bake peanut butter bites are perfect for a healthy snack to add to your diet. These bites are super easy to make, gluten-free, vegan, and delicious!
RECIPE
Yields 10, 2 – inch bites or 20, 1 – inch bites
INGREDIENTS
1/2 cup of Oats (I used steed cut)
1/2 cup of Almonds (I used whole, unsalted)
2/3 cup of Peanut Butter
2 Tbsp. of Honey
1/2 cup of Chocolate Protein Powder (optional, otherwise add 1 cup of oats)
NUTRITION INFO
Calories: 159
Fat: 9g
Carbohydrate: 16g
Dietary Fiber: 2g
Sugars: 5g
Protein: 5g
INSTRUCTIONS
1. Add your almonds to a blender and mix until desired size
2. Add protein powder, if desired, and oats and mix again
3. Add the peanut butter and mix all ingredients until well – combined
4. Transfer mixture into a bowl and mix in your honey; if too dry, add more honey
5. Roll mixture into 1 to 2 inch balls between your hands (Tip: Spray your hands with pam, butter, or oil before rolling to avoid sticky hands)
6. Place the bites on a baking sheet and place in the freezer for 30 minutes
7. Enjoy!
Once cooled, I transfer the bites to a ziplock bag or an airtight container and store them in the fridge / freezer. These can stay stored for up to 2 weeks, but they’ll never last that long!
