I think the first three ingredients are just to mix them together not bring just those to a boil.. (pack your brown sugar) add all the rest in then whisk until it all comes to a boil then boil until it thickens (thicker than just pudding). Your meringue broke down because the sugar didn't dissolve completely. Feel it between your fingers next time, if you have a next time, and you can tell if it doesn't feel grainy. This was painful to watch but I enjoyed your approach and conquer attitude. Btw I had never heard of putting maple extract in a butterscotch pie…so don't feel lost on that one. Lol Thanks for sharing!
When making meringue, I beat egg whites until soft stage, then I add sugar gradually like you did, but I do let each addition beat longer to really dissolve the sugar. Your meringue looked good.

Wait to add your butter and vanilla after it is done boiling for the one minute.
I bring the filling to a boil and boil for one minute then take off the heat and fill your shell. Hope that works, Kristen❤️
