I understand that Carnation evaporated milk has been reduced to around 50% so I am sure that explains the thickness.
Growing up everybody used evaporated milk in their coffee. Then the entire 50 years of evaporated milk and coffee disappeared.

I only use whole milk, or, fresh from the cow milk, for canning. Its thicker and creamier.

I guess Iโm curious because o just bought a pressure canner and I was wondering as to whether I could purchase regular, pasteurized milk at the lower price and convert it into UHT milk, which usually costs a lot more.

But evaporated milk is different than canned milk, for evaporated milk to be the same you need to.mix it 50/50 with water

Commercial canned milk all has a thicker added that is band in Europe. Carragean.
Michele, does the milk come out with a 'skin' on it as milk does when you are cooking it on the stovetop? I'm guessing it doesn't because I don't recall you ever mentioning it. I've gotten so tired of the sugar-free coffee creamer options and am ready to give this a try so I can control what goes in my own 'creamer'. Thank you for the many videos you've done on this subject. I have to agree with many of your commenters that the most probable reason this is no longer officially recommended is due to government supporting the dairy industry and trying to discourage the consumer from creating their own canned product.

Michele it might be as thick as store bought because Carnation adds this to it disodium phoshate, sodium ascorbate (vitamin C), carrageenan, cholecalciferol (vitamin D3). carrageenan is a thickening agent so you truly made Evaporated Milk just without all the crap =)

It's less than half the price, because it has twice the water content still. Evaporated milk has had a lot of the water evaporated out of it. Therefore it is thicker than regular milk. People don't seem to grasp this!
But I do think pressure canning my own goats' milk for the months when they are dry, will be a wonderful idea.
