Peanut Butter Ball Energy Bites Recipe:
1 cup raw oats
2 Tablespoons honey
2/3 cup peanut butter (I used Jiff creamy)
*use unsalted if you are watching your sodium
1/2 cup chocolate chips (I used Ghirardelli semi-sweet)
(*optional 1/2 cup ground Flax seeds I did not add these in the video so I did not include these in the nutritional information)
1. Stir oats and honey until well incorporated.
2. Fold in peanut butter until well incorporated.
3. Fold in chocolate chips until well incorporated.
4. Chill in the refrigerator for 15-30 minutes.
5. Roll into balls and store in the refrigerator in an air tight container for up to one week.
Nutritional Information per Serving:
(*I divided the total numbers by 14 because that is how many balls you end up with if you use a cookie scooper)
(*if you want a 100 calorie snack make 18 balls using a food scale and divide the totals by 18)
calories 1790 divided by 14 = 128 calories
fat 110 divided by 14 = 8g
saturated fat 33.5 divided by 14 = 2g
cholesterol 0g
sodium 700mg divided by 14 = 50mg
