Bacon Scallion Pepper Jack Macaroni and Cheese
Bacon Scallion Pepper Jack Macaroni and Cheese
Serves 8

1 pound pasta, cooked al dente, cooled (we used cavatappi)
12 ounces pepper jack cheese cut into bite sized cubes
12 ounces grated extra sharp cheddar cheese
1 1/4 cups chopped yellow onions
3/4 cup chopped scallions, white and green parts
1/4 cup seeded, chopped jalapeno peppers
1 tablespoon bacon drippings
1 pound thick cut applewood bacon, cooked, drained on paper towels
2 tablespoons all purpose flour
1 1/2 teaspoons dry mustard
1 teaspoon salt
1/2 teaspoon coarse ground black pepper
1/4 teaspoon paprika
1/4 teaspoon fresh ground nutmeg
1/4 teaspoon cayenne pepper
3/4 cup sour cream
2 large eggs, beaten
1 teaspoon Worcestershire sauce
1 1 /2 cups heavy cream
1 1/2 cups half and half
4 ounces good quality parmesan cheese, grated
