I always keep my wet ingredients away from my dry ingredients until the very end when they have to be combined together it makes for a much nicer cookie

I skeptically made these today out of curiosity mostly. I never saw an oatmeal cookie recipe with more salt than levener (baking soda). I just knew the cookie would be salty. I was wrong! The cookies turned out great!

I put the flour and oats in together and mixed and it came out as oily oats with bits of brown sugar on it
so perhaps be careful that the dough is doughy, sugar is dissolved and the oats isn't too much
I just made this really like them but mine seemed kind of dry hard to stick together. Once I rolled in hands was better. Also, might be my oven, but 10 minutes is to long made mine cruchy. So last batch was around 8 minues edges just turning took out. Husband likes them softer but still love the favor. I also added nuts.
Recipe:
Oatmeal Cookies
Preheat oven 375
3 c old fashioned oats
1 cup ap flour
3/4 teaspoon salt
1/2 tsp baking soda
Mix dry ingredients together; set aside
4 Tablespoons Butter
Melt and brown butter, pour into bowl and add:
1/2 cup vegetable oil
1/4 teaspoon cinnamon
3/4 cup brown sugar
1/2 cup white sugar
2 eggs- 1 yolk and 1 whole
1 teaspoon vanilla
Reserved dry ingredients
Optional 1/2 cup raisins
Scoop 3T onto parchment lined sheet pans
Press down with wet hands till 2 & 1/2 inches diameter
Bake 10mins 1 tray at a time. Sides slightly browned, set and center is soft.
Let sit on tray 5 mins before transferring to wire cooking rack.
This recipe tasted great but did not work well at high altitude (Denver). Cookies came out flat 🙁

Ingredients and quantities:
1 cup all purpose flour
3/4 tsp salt
1/2 tsp baking soda
4 tbsp of butter or 56g
1/2 cup oil
1/4 tsp cinammon
3/4 cup brown sugar
1/2 cup white sugar
1 egg + 1 egg yolk
1 tsp vanilla
3 cups rolled oats
1/2 cup raisins
Followed the recipe exactly; browned the butter, weighed out 3 tablespoons of batter for each cookie (mine were 60 grams each), measured them to 2 1/2 inches, baked 10 minutes. My edges were JUST starting to turn golden brown, I was tempted to go longer, but pulled them at 10. I’m glad that I did because they are fantastic! 10 out of 10 recommend!!

This recipe is pretty close to the original Quaker Oats one when the oats came in a metal can. Just replace the oil/butter with lard and it's bang-on.
Made some tweaks: Didn't have flour or oatmeal, so I used ground meat instead. I didn't have raisins so I threw in some chopped onions. The only spices in my pantry was a packet of taco seasoning. I cooked it in a big pot. Served in taco shells. Before my husband never liked oatmeal cookies, but after using this recipe with my tweaks, he keeps asking for them all the time!!!

I made the oatmeal cookies with and without raisins every time I make them and of course they are delicious 😋. I also use this recipe without the oatmeal for my chocolate chip cookies and also delicious. I add walnut in the last batch I cook.
