This sounds gross..so like if someone with a cold passes by the starter that bacteria is absorbed into the dough people will eat..??

This flour, water and microbes in the air made me think of the Corona virus! Thank goodness it isn't airborne, otherwise we'd have covid bread 😂🍞
i don't like the sour flavor of sour dough so i avoid it.
What kind of flour and water? Is it wheat? does it mean it is not gluten free?
REAL SOUR DOUGH is made when cute girls go to the gym and then they put their gym socks in the yeast mixture ….there you go everyone…thats the real way

So how do you make that San Fran what ever yeast?
You mentioned that the lactobacilli and wild yeasts get into the starter from "the air all around us." Bakers are aware that the most significant part of the yeasts and bacteria actually attached to the wheat kernels while in the field, and traveled into the starter while riding on the flour itself.
Bakers have tested this theory by heating raw flour to 140F, a point that the yeasts are killed but the structure of the wheat is not yet damaged. Now, using that sterilized wheat, try making a sourdough starter. If it works at all, the starter is weak, suggesting the majority of the microscopic creatures were hiding in the flour and not coming from the kitchen environment.
There is ongoing discussion that the symbiotic community living in sourdough starter may even gradually adapt itself to its own human baker (meaning, some of the wild fungus and bacteria species may actually come from the body of the individual baker).
Finally, given time for the initial symbiotic community to establish itself, your statement definitely becomes true: that the single celled fungus and bacteria in the air around us can also introduce itself into this complex microscopic universe we know as sourdough starter.
