Do you like pineapple upside cakes? Now you can make a single serving, in a mug, in the microwave in just minutes! Yum!

Topping:
3 T. brown sugar
1 t. pineapple juice
2 T. crushed pineapple (or 1 whole ring)
1 maraschino cherry
Cake:
6 T. flour
2 T. sugar
1/8 t. baking soda
1/2 an egg (beat, and use just half)
1/8 t. vanilla
2 T. butter, melted
2 T. pineapple juice
Spray a large coffee mug with non-stick spray.
Mix the brown sugar, pineapple juice, and crushed pineapple together, put it in the mug and add the cherry.
Cover mug with paper towel and cook on high for a minute.
While the topping is cooking, mix the cake in a bowl. Mix until everything is well incorporated. Do not over mix.
Remove the mug from the microwave and add the cake batter.
After adding the cake batter, cover with paper towel again and microwave for 1 minute 50 seconds.
Remove and let cool. Turn it out on a plate, enjoy!

Mug cakes are great. When I make a large cake, no one else eats it! So rather than throwing it away, I end up forcing myself to eventually, eat the whole thing!! Which is NOT GOOD!!!

Do I add baking powder or baking soda? You say one thing in the video but list the other in the recipe. This looks so yummy, can't wait to try it!
