INGREDIENTS
2 boxes macaroni noodles (can also use shells or penne)
2 cups whole milk
1 can evaporated milk
2 eggs
½ cup butter (1 stick)
1 cup sour cream
1 cup cubed extra sharp cheddar
1 cup shredded sharp cheddar
½ cubes shredded Monterey Jack
1 cup shredded Pepper Jack
½ cup parmesan
1 cup mozzarella
2 tbls seasoning salt
1 tbls smoked paprika
DIRECTIONS
1. Preheat your oven to 400F
2. Follow box directions for cooking the pasta, and add 2 tbls of salt to the water + a dash of olive oil
3. Mix together the whole milk, evaporated milk and egg in a bowl
4. Once noodles finish cooking, drain and return them to the hot pot and add butter + sour cream and mix together
5. When fully incorporated, add half of your cheeses to the noodles and mix
6. Butter your baking dish, and spread a thin layer of noodles on the bottom, a layer of cheese on top, and repeat
7. Once all noodles are in the pan, pour your milk and egg mixture overtop and sprinkle with smoked paprika
8. Cover, and bake for 1 hour then remove top and bake until top is browned. Should take about 1.5 hours

bring water to boil and put in pasta for about 8 mins
You already have extra sharp cheddar so there's no need for the mild cheddar so just use colby along with the Monterey Jack cheese

Tried a few other recipes with a béchamel sauce – not so fantastic. Then I found your recipe – and fell in LOVE! The only addition was a layer of grated parmesan on top prior to paprika. It was amazing! This will be my go to recipe. Thanks.

Dude I heard that you don’t put all in the water when you make a mega cheese because you want the cheese to be able to stick to the noodles you lost me at eggs a lot of people don’t like eggs because they don’t eat them and they look scrambled in a macaroni and cheese so instead they Use a slurry Instead which is corn starch add it into the milk to thicken it whole milk that is but overall do your thing but cheese yay
