I have been managing my diabetes for the last 2 years without medication through low carb high healthy fat diet, daily 16 hr fasting and an hour walk daily.
My diet includes sourdough bread that I bake on my own daily which includes organic wholegrains and inclusions that enhances the nutritional value of the bread. I eat my breads with whole foods such as green vegetables, sprouts, cherry tomatoes, green peas and meat. So far so good. My endocrinologist is pleased with my HbA1C test of 5.9 and a fasting sugar of 5.4.
I think the best way to control diabetes is fasting since it is a insulin resistance issue. Restricted feeding to a 8 hr window and no snacking between meals for me is the way to go. Occasionally I do a 24 hr fasting.
As for foods that raises blood sugar levels, they are rice, noodles, sodas, fruit juices, milk and table sugars.
Besides being a low GI food, sourdough bread is full of prebiotics that feeds the gut bacteria and there is a growing awareness of the importance of maintaining gut health which can impact our immunity and health.
I agree with you, the existing state of the overall health of the person with diabetes is an important consideration but all foods except for fats will impact blood sugar. Hence, it is all about portion and self control. Cheers
