Made this last night minus the Chipotle. It was DELICIOUS!
I had to use the regular baking pan with tin foil tent method. Worked just fine.
And I basted the ham a few times.

Made this at the Firehouse for the guys. BIG HIT! Used diet Dr. Pepper(only thing I had!) Brown Sugar, Oregano, Garllic powder, Black Pepper, Cayenne red pepper. Turned out excellent. Thanks for the Idea.
I cook my hams in a crockpot. Its easier & doesn’t heat up the kitchen like an oven will. I do not add any of that other stuff either (I do not like sweet meat). I spray the crockpot with non-stick cooking spray, add the ham & about half a cup of water & turn it on. It creates lots of broth which I later pour up, put in fridge until cold so I can pull the hardened fat off the top & then put in freezer to use for seasoning as needed for greens etc. I do pork roasts the same way but I do add kosher salt to those.
